Jenny Castellanos received a Bachelor of Science in Human Nutrition and Dietetics from Arizona State University in 2000 and completed her training to become a Registered Dietitian Nutritionist at Loyola University Chicago’s Marcella Neihoff School of Nursing in 2002. After living and working in Chicago, Los Angeles, and San Diego, she moved back to Arizona where she now calls home.
Jenny’s philosophy on well-being is that everything is ultimately connected and that we must, as Hippocrates once said, Let Food Be Thy Medicine and Medicine Be Thy Food. Her passions include food sustainability practices and promotion of scientifically sound medical nutrition therapies. She loves working with people to achieve optimal health by preventing and treating chronic diseases with foods that are healing, whole and beneficial to one’s health. For fun, Jenny enjoys weekend trips to the mountains where she can take in all that Arizona has to offer! She also loves to try new recipes, with a specialty focus on plant-based cuisine. Music is another passion, and as a life-long flautist she finds playing jazz and classical composition to be quite meditative. She shares her love of life with her friends, family, the animals and her daughter, Lily.
